Description

A cozy, plant-based twist on the holiday classic. This Vegan Almond Eggnog is creamy, spiced, and sweetened naturally—perfect served warm or chilled, with or without a splash of booze.


Ingredients

3 cups unsweetened almond milk

1 cup canned full-fat coconut milk

1/3 cup maple syrup

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon ground turmeric

1/8 teaspoon ground cloves

1 tablespoon cornstarch or arrowroot powder

1/2 teaspoon vanilla extract

1 pinch sea salt

1/4 cup bourbon or dark rum (optional)


Instructions

1. In a blender, combine the almond milk, coconut milk, maple syrup, cinnamon, nutmeg, turmeric, cloves, cornstarch, vanilla, and salt. Blend on high for 30 seconds until smooth.

2. Pour the blended mixture into a saucepan and place over medium heat. Stir continuously for 5 to 8 minutes until the mixture begins to thicken slightly and is warm but not boiling.

3. If using bourbon or rum, stir it in once the mixture is warmed and remove from heat.

4. Serve warm or let chill in the fridge for a few hours if you prefer it cold. Stir well before serving.

5. Pour into glasses, sprinkle with nutmeg, and enjoy!

Notes

This eggnog thickens more as it chills—just give it a good shake or stir before serving.

Skip the booze for a kid-friendly version.

Turmeric is just for color, so it’s completely optional.
