Ingredients

1 ½ pounds beef stew meat

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

3 carrots, sliced

2 stalks celery, sliced

2 medium potatoes, diced

1 cup green beans, trimmed and halved

1 can diced tomatoes (14.5 oz)

6 cups beef broth

1 bay leaf

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove and set aside.

2. In the same pot, sauté onion, garlic, carrots, and celery until softened and fragrant.

3. Return the beef to the pot. Add diced tomatoes, beef broth, potatoes, green beans, bay leaf, salt, and pepper. Stir well.

4. Bring the soup to a boil, then reduce heat to low. Cover and simmer for 1 hour, or until beef is fork-tender and vegetables are cooked through.

5. Remove bay leaf, taste, and adjust seasoning if needed. Serve hot with crusty bread or garnish with fresh parsley.
