Ingredients

1 lb chicken breast

12 oz penne pasta

1 cup Velveeta cheese, cubed

1 cup mozzarella cheese, shredded

3 garlic cloves, minced

1 cup heavy cream

2 tbsp butter

1 tbsp olive oil

1 tsp salt

1/2 tsp black pepper


Instructions

1. Cut chicken into bite-sized cubes. Heat olive oil and butter in a skillet over medium heat and sear chicken. Season with salt and pepper. Cook until browned and cooked through. Remove and set aside.

2. Boil penne in salted water until al dente. Drain, reserving 1 cup of pasta water.

3. In the same skillet, melt a bit more butter and sauté garlic until fragrant.

4. Pour in heavy cream and stir until warmed. Add Velveeta and mozzarella, stirring until fully melted and smooth.

5. Return chicken to skillet and add the cooked penne. Toss to coat in the cheese sauce.

6. Adjust sauce consistency with reserved pasta water if needed.

7. Serve hot, optionally garnished with more mozzarella or fresh herbs.

Let cheeses come to room temperature before melting to ensure smoothness.
