Description

A cozy, hearty soup featuring tender chicken, creamy Yukon Gold potatoes, and a medley of aromatics in a flavorful broth. Optional cream adds richness, perfect for chilly nights or family dinners.


Ingredients

1 tablespoon olive oil

1 medium onion, chopped

3 garlic cloves, minced

3 carrots, peeled and diced

2 celery stalks, chopped

1.5 pounds Yukon Gold potatoes, diced

1.5 pounds chicken thighs or breasts, cut into bite-sized pieces

6 cups chicken broth

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup heavy cream (optional)

2 tablespoons chopped fresh parsley


Instructions

1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook 5-6 minutes until softened.

2. Add chicken, potatoes, thyme, salt, and pepper. Pour in broth and bring to a boil.

3. Lower heat, simmer 25-30 minutes until chicken is cooked and potatoes are tender.

4. Stir in heavy cream if using; let warm through for 2-3 minutes.

5. Taste, adjust seasoning, and garnish with parsley before serving.

Notes

Use rotisserie chicken for a quick prep shortcut.

Add spinach or kale in the final minutes for extra nutrition.

For dairy-free, simply omit the cream—it’s still delicious.
