Ingredients
1 pound rotini pasta
1/2 pound ground beef
1/2 pound Italian sausage (mild or spicy)
4 cups fresh spinach
4 tablespoons butter
4 garlic cloves, minced
1/2 cup grated Parmesan cheese
Salt and pepper, to taste
1 tablespoon olive oil
1/4 teaspoon crushed red pepper flakes (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook rotini until al dente. Drain and reserve 1/2 cup pasta water.
2. In a large skillet, heat olive oil over medium heat. Cook ground beef and sausage until browned and cooked through. Drain excess grease.
3. Lower heat and add butter and garlic. Cook for 1–2 minutes until fragrant, not browned.
4. Stir in spinach and cook until just wilted.
5. Add cooked rotini to the skillet. Toss to combine, adding pasta water as needed to loosen sauce.
6. Sprinkle with Parmesan, season with salt, pepper, and optional red pepper flakes. Serve warm.
Notes
Use freshly grated Parmesan for best flavor and melt.
Don’t overcook spinach; it only needs a minute to wilt.
Add extra garlic or sausage if you want to intensify the flavor.
