Ingredients
1 lb ground beef
5 cups Yukon gold potatoes, peeled and diced
1 small onion, chopped
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, chopped
4 cups beef broth
1 cup milk
1/2 cup shredded cheddar cheese
1 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
Instructions
1. Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
2. Add the chopped onion, garlic, carrots, and celery to the pot. Cook for 4 to 5 minutes until the vegetables begin to soften.
3. Stir in the diced potatoes, dried thyme, salt, and black pepper.
4. Pour in the beef broth and stir well. Bring the soup to a gentle boil.
5. Reduce the heat to low, cover, and simmer for 20 to 25 minutes, or until the potatoes are tender.
6. Stir in the milk and shredded cheddar cheese. Cook for another 5 minutes over low heat, stirring gently until the cheese melts and the soup is creamy.
7. Taste and adjust seasoning if needed. Serve hot.
Notes
Use Yukon gold potatoes for a naturally buttery texture that holds up well in soup.
For a thicker soup, lightly mash some of the potatoes in the pot before serving.
If you plan to freeze it, leave out the milk and cheese until reheating for the best texture.
