Description
This Zesty Lemon Pecorino Crispy Chicken recipe is a vibrant twist on a classic cutlet. Crispy chicken cutlets are infused with lemon zest and nutty Pecorino Romano, perfect for a bold and quick dinner. Ideal for weeknights, this dish combines tangy, salty, and savory flavors in every bite.
Ingredients
2 large chicken cutlets
1 tablespoon lemon zest
1 cup grated Pecorino Romano cheese
1 cup panko breadcrumbs
2 eggs
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup olive oil or neutral frying oil
Instructions
1. Set up three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with lemon zest and Pecorino Romano.
2. Dip each chicken cutlet into the flour, then the egg, and finally coat it in the breadcrumb mixture, pressing lightly to adhere.
3. In a large skillet, heat about 1/2 inch of oil over medium-high heat. It’s ready when a breadcrumb sizzles on contact.
4. Fry chicken cutlets in batches for 3–4 minutes per side or until golden brown and cooked through. Avoid overcrowding the pan.
5. Transfer to a paper towel-lined plate. Serve hot with more Pecorino and an optional squeeze of lemon.
Notes
Pound chicken evenly for uniform cooking.
Zest the lemon before juicing it to make things easier.
Use an oven or air fryer to reheat for best crispiness.
