Ingredients
2 ripe bananas, mashed
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs
1/3 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
1/4 cup heavy cream
1 tablespoon unsalted butter
Instructions
1. Preheat the oven to 350°F and lightly grease a doughnut pan.
2. Mash the bananas in a large bowl until mostly smooth.
3. In another bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
4. Add the eggs, milk, melted butter, and vanilla extract to the mashed bananas and stir until combined.
5. Fold the dry ingredients into the wet ingredients and mix just until no dry streaks remain.
6. Spoon or pipe the batter into the prepared doughnut pan, filling each cavity about three-quarters full.
7. Bake for 12 to 15 minutes, or until the doughnuts spring back lightly when touched.
8. Let the doughnuts cool for a few minutes in the pan, then transfer them to a wire rack.
9. Melt the chocolate chips, heavy cream, and 1 tablespoon butter together, stirring until smooth.
10. Dip the cooled doughnuts into the chocolate glaze or spoon it over the tops.
11. Let the glaze set slightly before serving.
Notes
Use very ripe bananas for the best sweetness and flavor.
Do not overmix the batter or the doughnuts can turn heavy.
Let the doughnuts cool before glazing so the chocolate sets nicely on top.
