Ingredients
1 cup unsalted butter, softened
1 1/4 cups light brown sugar, packed
1/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg, optional
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Add the eggs one at a time, then mix in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg if using.
5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. In a small bowl, stir together the 2 tablespoons granulated sugar and 1 teaspoon cinnamon for rolling.
7. Scoop tablespoon-sized portions of dough, roll into balls, and coat lightly in the cinnamon sugar mixture.
8. Arrange the dough balls on the prepared baking sheets about 2 inches apart.
9. Bake for 9 to 11 minutes, until the edges are lightly golden and the centers are just set.
10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the dough once the flour is added or the cookies can turn dense.
Pull the cookies from the oven when the centers look just set so they stay soft after cooling.
If the dough feels too warm or sticky, chill it for 20 to 30 minutes before baking.
