Ingredients

1 refrigerated pie crust

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

2 tablespoons butter

1 small onion, diced

1 small green bell pepper, diced

1 celery stalk, diced

2 cloves garlic, minced

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

2 tablespoons all-purpose flour

3/4 cup milk

1/2 cup heavy cream

2 large eggs

1 cup shredded cheddar cheese

2 tablespoons chopped parsley


Instructions

1. Preheat the oven to 375°F and fit the pie crust into a 9-inch pie dish.

2. Heat the olive oil and butter in a skillet over medium heat, then cook the onion, bell pepper, and celery until softened.

3. Stir in the garlic and cook for 30 seconds.

4. Add the shrimp, Cajun seasoning, smoked paprika, black pepper, and salt, then cook just until the shrimp begin to turn pink.

5. Sprinkle the flour over the mixture and stir well.

6. Slowly pour in the milk and heavy cream, stirring until the filling is smooth and lightly thickened.

7. Remove from the heat and let the mixture cool slightly.

8. Beat the eggs in a small bowl, then stir them into the filling.

9. Fold in the cheddar cheese and chopped parsley.

10. Pour the filling into the prepared crust and spread evenly.

11. Bake for 35 minutes, or until the center is set and the top is lightly golden.

12. Rest for 10 minutes before slicing and serving.

Notes

Pat the shrimp dry before cooking so the filling stays creamy instead of watery.

Let the filling cool slightly before adding the eggs so they blend in smoothly.

Rest the pie before slicing so each piece holds together better.
