2 cups cooked chicken, shredded or diced
1 can cream of chicken soup
1 cup sour cream
1 cup chicken broth
2 cups frozen mixed vegetables
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup shredded cheddar cheese
2 cups biscuit baking mix
2/3 cup milk
2 tablespoons melted butter
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, mix the cooked chicken, cream of chicken soup, sour cream, chicken broth, frozen mixed vegetables, garlic powder, onion powder, thyme, black pepper, and salt until well combined.
3. Spread the filling evenly into the prepared baking dish.
4. Sprinkle the shredded cheddar cheese over the filling.
5. In a separate bowl, whisk together the biscuit baking mix, milk, and melted butter just until combined.
6. Spoon or pour the topping evenly over the casserole.
7. Bake for 30 to 35 minutes, until the topping is golden brown and the filling is bubbling.
8. Let the casserole rest for 5 to 10 minutes before serving.
Notes
Use rotisserie chicken to make prep even faster.
Do not thaw the frozen vegetables first or the filling may become too watery.
Let the casserole rest before serving so the filling can thicken slightly.
