Ingredients

16 ounces elbow macaroni

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

1 cup evaporated milk

8 slices American cheese

2 cups shredded sharp cheddar cheese

1 cup shredded Italian cheese blend or Romano and Parmesan mix

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon paprika

1/2 teaspoon mustard powder

1/2 cup shredded cheddar cheese for topping

1/4 cup shredded Parmesan cheese for topping


Instructions

1. Bring a large pot of salted water to a boil and cook the elbow macaroni until just al dente. Drain well and set aside.

2. Preheat the oven to 400°F and lightly grease a baking dish.

3. In a large saucepan, melt the butter over medium heat.

4. Whisk in the flour and cook for 1 minute until smooth and lightly bubbly.

5. Slowly whisk in the whole milk and evaporated milk until the mixture is smooth.

6. Cook for 3 to 5 minutes, stirring often, until the sauce thickens.

7. Reduce the heat to low and add the American cheese, shredded sharp cheddar, and Italian cheese blend a little at a time.

8. Stir until the cheese is fully melted and the sauce is smooth.

9. Add the salt, black pepper, paprika, and mustard powder.

10. Stir in the cooked macaroni until every piece is evenly coated.

11. Transfer the mac and cheese to the prepared baking dish.

12. Sprinkle the top with the remaining cheddar and Parmesan cheese.

13. Bake for 15 to 20 minutes until hot, bubbly, and lightly golden on top.

14. Let it rest for 5 minutes before serving.

Notes

Use freshly shredded cheese for the smoothest sauce and best melt.

Do not overcook the pasta since it will continue cooking in the oven.
