Description

Classic Green Beans Almondine is a simple, elegant side dish made with tender green beans, buttery toasted almonds, shallots, garlic, and a bright touch of lemon. It comes together quickly and adds a fresh, classic flavor to weeknight dinners, holiday meals, and special gatherings.


Ingredients

1 pound fresh green beans, trimmed

3 tablespoons unsalted butter

1/3 cup sliced almonds

1 small shallot, finely minced

1 clove garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

2 tablespoons water


Instructions

1. Wash and trim the green beans, removing the stem ends.

2. Bring a pot of salted water to a boil and cook the green beans for 3 to 4 minutes until bright green and just tender. Drain and rinse with cold water or place in ice water to stop the cooking.

3. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced almonds and toast for 2 to 3 minutes, stirring often, until lightly golden. Transfer to a plate.

4. Add the remaining butter to the skillet. Stir in the shallot and cook for 1 minute until softened. Add the garlic and cook for 30 seconds more.

5. Add the blanched green beans and water to the skillet. Toss and cook for 2 to 3 minutes until heated through.

6. Stir in the lemon juice, lemon zest, salt, and black pepper. Return the toasted almonds to the skillet and toss everything together.

7. Serve warm with the almonds spooned over the top.

Notes

Do not overcook the green beans during blanching or they will lose their crisp texture.

Toast the almonds carefully and stir often so they turn golden without burning.

Add the lemon juice at the end to keep the flavor fresh and bright.
