Ingredients

4 boneless skinless chicken breasts

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1 tablespoon butter

1/2 cup ranch dressing

1/3 cup grated Parmesan cheese

1/2 cup shredded provolone cheese

1/2 cup shredded mozzarella cheese

1/2 cup panko breadcrumbs

2 tablespoons melted butter

1 teaspoon Italian seasoning

1 teaspoon chopped parsley


Instructions

1. Pat the chicken breasts dry and pound them to an even thickness if needed. Season both sides with salt, black pepper, garlic powder, onion powder, and paprika.

2. Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear the chicken for 5 to 6 minutes per side until golden and nearly cooked through. Transfer to a baking dish.

3. In a small bowl, mix the ranch dressing with the grated Parmesan cheese. Spread the mixture evenly over each piece of chicken.

4. In another bowl, combine the provolone cheese, mozzarella cheese, panko breadcrumbs, melted butter, and Italian seasoning. Spoon the topping over the chicken and press it lightly into place.

5. Broil the chicken for 2 to 4 minutes until the topping is melted, bubbly, and golden brown.

6. Remove from the oven, rest for a few minutes, then sprinkle with chopped parsley and serve.

Notes

Use evenly sized chicken breasts so they cook at the same rate.

Watch the broiler closely because the cheesy topping can brown very quickly.

For the best texture, reheat leftovers in the oven or air fryer instead of the microwave.
