Description
Crazy Cake is a soft, moist chocolate cake made with simple pantry staples and no eggs, milk, or butter. It comes together quickly in one bowl, bakes into a tender crumb, and delivers rich chocolate flavor with very little effort.
Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon white vinegar
1/3 cup vegetable oil
1 cup water
1/2 cup chocolate chips, optional
powdered sugar or chocolate frosting, optional for serving
Instructions
1. Preheat the oven to 350°F and lightly grease an 8-inch square baking dish.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
3. Add the vanilla extract, white vinegar, vegetable oil, and water. Stir just until the batter is smooth.
4. Fold in the chocolate chips if using.
5. Pour the batter into the prepared pan and smooth the top.
6. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
7. Let the cake cool in the pan for at least 20 minutes before slicing and serving.
8. Dust with powdered sugar or spread with chocolate frosting if desired.
Notes
Use natural unsweetened cocoa powder for the classic flavor and texture.
Do not overmix the batter or the cake can turn less tender.
Let the cake cool before frosting so the topping stays smooth and neat.
