Creamed Corn is a rich, cozy side dish made with tender corn kernels, butter, milk, cream, and a touch of cheese for extra flavor. It comes together easily on the stovetop and pairs beautifully with holiday dinners, barbecue, roast chicken, or any comfort food meal.
Ingredients
1 tablespoon butter
1 tablespoon all-purpose flour
2 cups whole milk
1 cup heavy cream
4 cups corn kernels
2 tablespoons granulated sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 ounces cream cheese
2 tablespoons grated Parmesan cheese
Instructions
1. Melt the butter in a large skillet or saucepan over medium heat.
2. Whisk in the flour and cook for 1 minute until lightly blended.
3. Slowly pour in the milk, whisking constantly until smooth.
4. Stir in the heavy cream and cook for 2 to 3 minutes until the mixture begins to thicken.
5. Add the corn, sugar, salt, and black pepper. Stir well to combine.
6. Reduce the heat to low and simmer for 10 to 12 minutes, stirring occasionally.
7. Add the cream cheese and Parmesan cheese. Stir until fully melted and smooth.
8. Taste, adjust seasoning if needed, and serve warm.
Notes
Use frozen corn that has been thawed for the best texture and easiest prep.
If the mixture gets too thick, stir in a splash of milk before serving.
For extra depth, add a little more black pepper or a spoonful of Parmesan right before serving.
