Ingredients
1 pound salmon fillet, cut into bite-sized cubes
2 tablespoons cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 large egg
1 cup panko breadcrumbs
1/3 cup mayonnaise
3 tablespoons sweet chili sauce
1 tablespoon sriracha
1 teaspoon honey
Instructions
1. Cut the skinless salmon into bite-sized cubes and pat dry.
2. In a small bowl, whisk the egg. In another bowl, mix cornstarch, garlic powder, paprika, salt, and pepper.
3. Dip salmon pieces into egg, then into the cornstarch mixture, then coat with panko.
4. Cook using your preferred method:

6. – Bake at 425°F for 12–15 minutes
7. – Shallow-fry in oil until golden and cooked through
8. For the sauce, whisk together mayonnaise, sweet chili sauce, sriracha, and honey in a bowl.
9. Drizzle sauce over the salmon bites or serve it on the side.

Pat salmon dry thoroughly to help the coating stick.
