Description
Dill Pickle Parmesan Chicken combines crispy, cheesy coating with the tangy kick of dill pickle brine for a unique twist on comfort food. Marinated for extra juiciness and fried to golden perfection, this chicken delivers big flavor in every bite.
Ingredients
4 boneless skinless chicken breasts
1 cup dill pickle juice
1 cup buttermilk
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup all-purpose flour
1 cup panko breadcrumbs
0.5 cup grated parmesan cheese
0.5 teaspoon paprika
0.5 teaspoon black pepper
1 teaspoon salt
2 eggs
Neutral oil for frying (like canola or vegetable)
Instructions
1. Place the chicken breasts in a bowl or zip-top bag. Mix dill pickle juice and buttermilk and pour over the chicken. Marinate in the fridge for at least 1 hour, ideally 4–6 hours.
2. In a shallow bowl, combine flour, panko, parmesan, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, beat the eggs.
3. Remove chicken from marinade and pat dry. Dip each piece in egg, then coat with breadcrumb mixture, pressing to adhere.
4. Heat 1/2 inch oil in a skillet over medium-high. Fry chicken for 4–5 minutes per side until golden and cooked through (165°F internal temp). Drain on a wire rack or paper towels.
5. Serve hot with mashed potatoes, coleslaw, or in sandwiches. Reheat leftovers in the oven or air fryer.
Notes
Use garlic dill pickle juice for maximum flavor.
Don’t skip drying the chicken before coating to help the breading stick.
Fry in batches to avoid crowding the pan, which ensures even crisping.
