Ingredients
2 cups cooked chicken, shredded or diced
1 package cheese tortellini (refrigerated, 20 oz)
1 cup Velveeta cheese, cubed
1 cup shredded mozzarella cheese
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
2 tablespoons butter
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1 tablespoon chopped parsley (optional)
Instructions
1. Melt butter in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
2. Pour in chicken broth and heavy cream. Stir and bring to a gentle simmer.
3. Add Velveeta cubes. Stir until completely melted and smooth.
4. Add the cooked chicken and tortellini. Stir gently to coat. Cook for 5 to 7 minutes until the tortellini is tender.
5. Stir in shredded mozzarella. Let it melt fully. Season with salt and pepper to taste.
6. If needed, add a splash of broth or cream to thin the sauce.
7. Remove from heat. Garnish with chopped parsley and serve warm.
Notes
Always use medium heat when melting cheese to avoid separation.
Add cooked spinach or peas for extra nutrients and color.
For extra creaminess, increase mozzarella to 1½ cups.
