Ingredients
1/2 cup unsalted butter
2 cups granulated sugar
1/2 cup milk
1 cup creamy peanut butter
2 teaspoons vanilla extract
3 cups quick oats
1/4 teaspoon salt
Instructions
1. Line two baking sheets, trays, or large plates with parchment paper or wax paper.
2. Add the butter, sugar, and milk to a medium saucepan over medium heat.
3. Stir until the butter melts and the mixture comes together.
4. Bring the mixture to a full rolling boil and let it boil for 1 minute.
5. Remove the saucepan from the heat.
6. Stir in the peanut butter, vanilla extract, and salt until smooth.
7. Add the quick oats and mix until fully coated.
8. Drop spoonfuls of the mixture onto the prepared surface.
9. Let the cookies set at room temperature for 20 to 30 minutes, or chill to firm them faster.
Notes
Boil the sugar mixture for the full 1 minute so the cookies set properly.
