Easy Sheet Pan Sausage with Vegetables is a simple one-pan dinner made with smoky sausage, colorful vegetables, olive oil, and seasonings, all roasted until tender and lightly caramelized for an easy, satisfying meal.
Ingredients
14 ounces smoked sausage, sliced into rounds
2 bell peppers, chopped
1 medium red onion, cut into chunks
2 medium zucchini, sliced into half moons
2 cups broccoli florets
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley, optional for garnish
Instructions
1. Preheat your oven to 425°F and line a large sheet pan with parchment paper or lightly grease it.
2. Chop the bell peppers, red onion, zucchini, and broccoli into evenly sized pieces, then slice the sausage into rounds.
3. Place the sausage and vegetables in a large bowl. Drizzle with olive oil and season with garlic powder, Italian seasoning, paprika, salt, and black pepper. Toss well to coat.
4. Spread everything in a single layer on the prepared sheet pan.
5. Roast for 25 to 30 minutes, stirring halfway through, until the vegetables are tender and the sausage is lightly browned around the edges.
6. Remove from the oven, garnish with chopped parsley if desired, and serve hot.
Notes
Cut the vegetables into similar sizes so they roast evenly.
Do not overcrowd the pan or the vegetables may steam instead of caramelize.
For extra browning, use a large sheet pan and roast on the upper middle oven rack.
