Description

Soft, fluffy, and warmly spiced, these Fat-Free Greek Yogurt Cinnamon Rolls bring all the cozy comfort of a classic cinnamon roll with a lighter twist. The dough stays tender thanks to fat-free Greek yogurt, which adds moisture and a gentle tang that balances the sweet cinnamon filling beautifully.


Ingredients

2 1/4 teaspoons active dry yeast

3/4 cup warm milk

1/4 cup granulated sugar

1 large egg

3/4 cup fat-free Greek yogurt

3 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon vanilla extract

2 tablespoons unsweetened applesauce

1/2 cup brown sugar

1 1/2 tablespoons ground cinnamon

2 tablespoons melted light butter or additional applesauce

1 cup powdered sugar

2 to 3 tablespoons fat-free Greek yogurt

1 to 2 tablespoons milk

1/2 teaspoon vanilla extract


Instructions

1. Stir together the warm milk, yeast, and granulated sugar in a large bowl. Let it sit for 5 to 10 minutes until foamy.

2. Add the egg, fat-free Greek yogurt, vanilla extract, and applesauce. Mix until smooth.

3. Add the flour and salt, then knead for 6 to 8 minutes until the dough is soft and elastic.

4. Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size.

5. Mix the brown sugar and cinnamon in a small bowl.

6. Roll the dough into a 12 x 16 inch rectangle. Brush with melted light butter or applesauce, then sprinkle evenly with the cinnamon sugar mixture.

7. Roll the dough tightly into a log and slice into 9 to 12 rolls.

8. Place the rolls in a greased baking dish, cover, and let rise again for 25 to 35 minutes.

9. Bake at 350°F for 20 to 24 minutes, until lightly golden.

10. Whisk together the powdered sugar, fat-free Greek yogurt, milk, and vanilla extract to make the glaze.

11. Let the rolls cool for 10 minutes, then drizzle with glaze and serve warm.

Notes

Use warm milk, not hot milk, so the yeast activates without being damaged.

If the dough feels sticky, add flour one tablespoon at a time instead of too much at once.

For the softest rolls, glaze them while they are still slightly warm.
