Ingredients
2 boneless skinless chicken breasts
8 oz linguine pasta
3 tbsp butter
3 cloves garlic minced
1 cup grated parmesan cheese 1 cup heavy cream
1 tbsp olive oil salt and pepper to taste
2 tbsp chopped fresh parsley
Instructions
Pound chicken breasts to even thickness and season both sides generously with salt and pepper.
Bring a large pot of salted water to boil and cook linguine according to package instructions.
Drain and set aside. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
Sear chicken on both sides until golden and cooked through.
Remove from skillet and set aside. Reduce heat, melt remaining butter in the same skillet, add minced garlic and sauté for 1 minute.
Stir in heavy cream and parmesan, whisking until smooth and creamy.
Add cooked linguine to skillet, tossing to coat evenly in the sauce.
Slice chicken and serve over pasta, garnished with chopped parsley.
Notes
Use freshly grated parmesan for the creamiest sauce. Don’t overcrowd the skillet when cooking chicken. Add a splash of cream when reheating leftovers to loosen the sauce.
