A cozy and comforting soup inspired by traditional Polish stuffed cabbage rolls. This hearty one-pot meal combines ground beef, green cabbage, rice, and a tomato-based broth for a delicious, nostalgic bowl of goodness.
Ingredients
1 lb ground beef
1 tablespoon olive oil
1 small onion, chopped
3 garlic cloves, minced
1/2 head green cabbage, chopped
15 oz can tomato sauce
14.5 oz can diced tomatoes
4 cups beef broth
1 cup cooked white rice
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart. Drain excess fat.
2. Add chopped onion and garlic, cooking for 3–4 minutes until translucent and fragrant.
3. Stir in chopped cabbage, tomato sauce, and diced tomatoes. Simmer for 5–7 minutes until cabbage softens.
4. Pour in beef broth, brown sugar, Worcestershire sauce, paprika, thyme, salt, and pepper. Bring to a boil.
5. Reduce heat and simmer uncovered for 25–30 minutes until cabbage is fully tender.
6. Stir in cooked rice and simmer another 5 minutes until heated through. Adjust seasoning to taste.
Notes
• Use pre-cooked rice to save time and ensure proper texture.
• Green cabbage works best; avoid red cabbage for this soup.
• Add sour cream on top before serving for an extra creamy touch.
