Ingredients
2 cups cherry tomatoes, halved
1 English cucumber, sliced into half moons
1/2 red onion, thinly sliced
1 cup Kalamata olives, pitted
6 oz block feta cheese, cubed or crumbled
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tsp dried oregano
Salt and freshly ground black pepper, to taste
Instructions
1. Slice the cherry tomatoes, cucumber, and red onion. Add them to a large bowl.
2. Add the olives and gently mix in the feta cheese.
3. In a small bowl, whisk the olive oil, vinegar, oregano, salt, and pepper.
4. Drizzle the dressing over the salad and toss lightly.
