Ingredients
4 boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 ripe mangoes diced
2 ripe avocados diced
1/4 cup red onion finely chopped
1/4 cup fresh cilantro chopped
1 tablespoon lime juice
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
lime wedges for serving
Instructions
1. Pat the chicken breasts dry with paper towels. In a small bowl, mix 2 tablespoons olive oil, garlic powder, paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper. Rub the mixture evenly over both sides of the chicken.
2. Let the seasoned chicken rest for 15 to 20 minutes while the grill heats.
3. In a medium bowl, combine the diced mangoes, diced avocados, red onion, cilantro, lime juice, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Toss gently.
4. Preheat an outdoor grill or grill pan over medium-high heat and lightly oil the grates.
5. Grill the chicken for 5 to 7 minutes per side, depending on thickness, until the internal temperature reaches 165°F.
6. Transfer the chicken to a plate and let it rest for 5 minutes.
