Description

Ground Turkey Rice Bowls are a quick, satisfying meal made with seasoned ground turkey, fluffy rice, crisp vegetables, and simple toppings that bring everything together in one easy bowl. They are perfect for busy weeknights, simple lunches, or meal prep when you want something filling, flavorful, and flexible.


Ingredients

1 pound ground turkey

2 cups cooked white rice

1 tablespoon olive oil

1 small yellow onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 cup shredded carrots

2 tablespoons low-sodium soy sauce

1 tablespoon sesame oil

1 tablespoon honey

1 teaspoon rice vinegar

1 teaspoon ground ginger

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

2 green onions, sliced

1 tablespoon sesame seeds

1 avocado, sliced

1 cup cucumber, diced


Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, then cook for 3 to 4 minutes until softened.

2. Stir in the minced garlic and cook for 30 seconds until fragrant.

3. Add the ground turkey and break it up with a spoon. Cook for 6 to 8 minutes until no longer pink.

4. Season the turkey with salt, black pepper, paprika, and ground ginger.

5. Stir in the shredded carrots, soy sauce, sesame oil, honey, and rice vinegar. Cook for 2 to 3 more minutes until everything is well coated and heated through.

6. Warm the cooked rice if needed and fluff it with a fork.

7. Divide the rice among bowls and spoon the turkey mixture over the top.

8. Add sliced avocado and diced cucumber to each bowl.

9. Finish with green onions and sesame seeds, then serve warm.

Notes

Use freshly cooked rice or day-old rice that has been reheated so the bowls stay fluffy instead of gummy.

Do not overcook the turkey or it can turn dry, especially once the sauce is added.

Add avocado just before serving so it stays fresh and keeps its texture.
