Description

A hearty Irish Cheddar & Cabbage Hash Brown Skillet made with crispy potatoes, sautéed cabbage, and melty Irish cheddar. This vegetarian skillet recipe is perfect for brunch, dinner, or a comforting side dish.


Ingredients

4 medium potatoes, grated 3 cups shredded cabbage 1 ½ cups grated Irish cheddar cheese 3 tablespoons butter ½ teaspoon salt ¼ teaspoon black pepper


Instructions

1. Grate the potatoes and squeeze out any excess moisture with a kitchen towel. Heat butter in a large skillet over medium heat. Press the grated potatoes into an even layer and cook until the underside is golden brown. Flip to crisp the other side. Remove the hash browns to a plate and add more butter to the skillet if needed. Sauté the shredded cabbage until soft and lightly caramelized. Return the hash browns to the skillet and top with the cabbage. Sprinkle grated Irish cheddar over the top, cover the skillet for a few minutes until the cheese melts. Serve hot straight from the pan.

Notes

Use medium heat to avoid burning the potatoes before they cook through. Do not overcrowd the skillet, so the potatoes stay crisp. Leftovers reheat well in a skillet to revive the texture.
