Ingredients
1/2 pound lean ground beef
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon ketchup
1 teaspoon yellow mustard
4 medium low carb or whole wheat tortillas
1 cup reduced-fat shredded cheddar cheese
1/2 cup shredded lettuce
1/2 cup diced tomato
1/4 cup finely diced red onion
1/4 cup chopped dill pickles
1 teaspoon olive oil or cooking spray
2 tablespoons light burger sauce or plain Greek yogurt, optional
Instructions
1. Heat a nonstick skillet over medium heat and cook the lean ground beef, breaking it into small crumbles, until browned. Drain excess grease if needed.
2. Stir in the garlic powder, onion powder, paprika, black pepper, salt, ketchup, and yellow mustard. Cook for 1 to 2 minutes until the beef is evenly seasoned.
3. Lay the tortillas flat and sprinkle a little cheese over one half of each tortilla.
4. Divide the beef mixture evenly over the cheese, then top with the remaining cheese.
5. Fold each tortilla in half to form a quesadilla.
6. Lightly coat the skillet with olive oil or cooking spray and cook each quesadilla for 2 to 3 minutes per side until golden brown and crisp.
7. Transfer to a cutting board and rest for 1 minute before slicing.
8. Serve with shredded lettuce, diced tomato, red onion, chopped pickles, and light burger sauce or Greek yogurt if desired.
Notes
Use extra lean beef to keep the filling lighter without losing that classic cheeseburger flavor.
Do not overfill the tortillas or they will be harder to flip and may turn soggy.
