Ingredients
2 slices sourdough or ciabatta bread
1/3 cup shredded mozzarella cheese
2 tablespoons crumbled feta cheese
2 tablespoons sun-dried tomatoes, chopped
1 tablespoon black olives, sliced
5 fresh basil leaves
1 tablespoon butter, softened
1 pinch dried oregano or crushed red pepper flakes (optional)
Instructions
1. Spread the softened butter on one side of each bread slice.
2. Place one slice, butter-side down, on a skillet. Layer mozzarella, feta, sun-dried tomatoes, olives, and basil. Sprinkle optional oregano or red pepper.
3. Top with the second slice, butter-side up.
4. Grill on medium heat for 3–4 minutes until the bottom is golden. Flip and grill another 3 minutes.
5. Remove from skillet and let rest 1 minute before slicing. Serve warm.
Notes
Always use sturdy bread like sourdough to avoid sogginess.
