Mediterranean Stuffed Salmon Recipe

Description

This Mediterranean stuffed salmon recipe is a delicious and healthy dinner idea featuring salmon fillets filled with feta, spinach, sundried tomatoes, and Kalamata olives. Packed with bold flavors, it’s a quick and easy Mediterranean-inspired main course perfect for weeknight meals or special occasions.


Ingredients

4 center-cut salmon fillets

2 cups fresh spinach

1⁄3 cup sundried tomatoes, chopped

1⁄2 cup crumbled feta cheese

1⁄4 cup Kalamata olives, sliced

2 cloves garlic, minced

1 teaspoon lemon zest

1 tablespoon olive oil

1⁄2 teaspoon salt

1⁄4 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a skillet, heat olive oil and sauté garlic for 1 minute, then add spinach and cook until wilted.

3. Remove from heat and stir in sundried tomatoes, feta cheese, olives, and lemon zest.

4. Pat salmon fillets dry and use a sharp knife to cut a pocket in the side of each fillet.

5. Stuff each salmon fillet with the prepared mixture, packing generously.

6. Place salmon on the baking sheet, brush with olive oil, and season with salt and pepper.

7. Bake for 15–18 minutes or until salmon is cooked through and flakes easily with a fork.

8. Let rest for a couple of minutes, then serve warm with your favorite sides.

Notes

Use center-cut fillets for even cooking and easier stuffing.

Don’t overstuff the fillets to prevent spillage during baking.

Fresh lemon juice over the top after baking brightens the flavors beautifully.
