Description

Peach Cobbler Overnight Oats are creamy, cozy, and packed with sweet peach flavor, cinnamon, and a buttery cobbler-style topping. This easy make-ahead breakfast tastes like dessert but works beautifully for busy mornings.


Ingredients

1 cup old-fashioned rolled oats

1 cup milk

1/2 cup plain Greek yogurt

1 tablespoon chia seeds

1 tablespoon maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 pinch ground nutmeg

1 cup diced peaches

2 tablespoons chopped pecans

1 tablespoon brown sugar

1 tablespoon melted butter

1 tablespoon flour


Instructions

1. In a medium bowl or jar, stir together the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, cinnamon, and nutmeg until smooth and evenly combined.

2. Fold in most of the diced peaches, reserving a small amount for topping before serving.

3. In a small bowl, mix the chopped pecans, brown sugar, melted butter, and flour until a crumbly topping forms.

4. Cover the oats and refrigerate for at least 4 hours, or overnight, until thick and creamy.

5. Stir the oats before serving, then top with the reserved peaches and the cobbler topping.

Notes

Use ripe but firm peaches for the best texture and flavor.

Keep the topping separate until serving if you want it to stay crisp.

Add a splash of milk before serving if the oats thicken more than you like overnight.
