Description
These peanut butter cookies are soft in the center, lightly crisp around the edges, and packed with rich, nutty flavor in every bite. They come together with simple pantry staples, making them perfect for an easy afternoon bake, holiday cookie tray, or anytime sweet craving.
Ingredients
1 cup creamy peanut butter
3/4 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. In a large mixing bowl, beat the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy.
3. Add the egg and vanilla extract, then mix until fully combined.
4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Scoop tablespoon-sized portions of dough, roll them into balls, and place them on the prepared baking sheet.
7. Use a fork to gently flatten each dough ball with a crisscross pattern.
8. Bake for 9 to 11 minutes, until the edges are set and lightly golden.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Do not overbake the cookies if you want them to stay soft in the center.
Use regular creamy peanut butter for the most reliable texture and spread.
Let the cookies rest on the baking sheet before moving them so they can finish setting properly.
