Ingredients
0.75 cup pecans
0.25 cup unsalted butter (for topping)
0.5 cup brown sugar
0.5 cup unsalted butter (for batter)
0.5 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1.5 teaspoons baking powder
0.25 teaspoon salt
0.5 cup milk
Instructions
1. Preheat oven to 350°F. In a 9-inch pan, melt 0.25 cup butter and sprinkle brown sugar evenly. Layer pecans on top.
2. In a bowl, cream together 0.5 cup butter and granulated sugar. Add eggs one at a time, then stir in vanilla extract.
3. In another bowl, whisk flour, baking powder, and salt. Add to wet ingredients alternately with milk, mixing until just combined.
4. Gently spoon the batter over the pecan layer in the pan and spread evenly.
5. Bake for 35–40 minutes or until a toothpick comes out clean.
6. Let cake rest for 5 minutes, then invert onto a plate. Cool slightly before serving.
Notes
Make sure to use a pan at least 2 inches deep.
Don’t overmix the batter to avoid a dense cake.
