Description
Rotisserie Chicken Pho is a fast, comforting soup made with shredded rotisserie chicken, fragrant broth, rice noodles, and fresh toppings like herbs, bean sprouts, jalapeños, and lime for a cozy bowl with classic pho-inspired flavor.
Ingredients
1 rotisserie chicken, meat shredded
8 cups chicken broth
1 medium yellow onion, halved
1 3-inch piece fresh ginger, halved lengthwise
3 cloves garlic, smashed
2 star anise pods
1 cinnamon stick
4 whole cloves
1 tablespoon whole coriander seeds
1 tablespoon fish sauce
1 tablespoon low-sodium soy sauce
1 teaspoon sugar
8 ounces rice noodles
2 green onions, thinly sliced
1 cup bean sprouts
1 jalapeño, thinly sliced
1 lime, cut into wedges
1 cup fresh cilantro leaves
1 cup fresh basil or Thai basil leaves
Salt to taste
Black pepper to taste
Instructions
1. Char the onion and ginger in a dry skillet or under the broiler until lightly blackened and fragrant.
2. Toast the star anise, cinnamon stick, cloves, and coriander seeds in a large pot for 1 to 2 minutes until aromatic.
3. Add the chicken broth, charred onion, ginger, garlic, fish sauce, soy sauce, and sugar to the pot. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes.
4. Strain the broth and return it to the pot. Taste and season with salt and black pepper as needed. Add the shredded rotisserie chicken and warm through for 5 minutes.
5. Cook the rice noodles according to the package directions, then drain well.
6. Divide the noodles among bowls, top with chicken, and ladle the hot broth over them.
7. Finish with green onions, bean sprouts, jalapeño, cilantro, basil, and lime wedges before serving.
Notes
Use freshly charred onion and ginger for the best broth flavor.
Cook the noodles just until tender so they do not become too soft in the hot broth.
Store the broth, noodles, and toppings separately if making ahead for the best texture.
