Description
Savory Harry Potter Food is a cozy, golden-topped chicken pot pie style dish that feels like it came straight from a warm table in the Great Hall. With tender chicken, vegetables, a creamy herb-filled sauce, and flaky puff pastry baked until crisp, it is a fun and satisfying dinner for themed parties, family movie nights, or any time you want comfort food with a little magic.
Ingredients
2 tablespoons butter
1 tablespoon olive oil
1 pound boneless skinless chicken breasts diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 small yellow onion diced
2 cloves garlic minced
1 cup carrots diced
1 cup peas frozen
2 tablespoons all-purpose flour
1 1/2 cups chicken broth
1/2 cup heavy cream
1 teaspoon dried thyme
1 sheet puff pastry thawed
1 large egg beaten
1 tablespoon chopped parsley
Instructions
1. Heat the butter and olive oil in a large skillet over medium heat. Add the diced chicken, salt, pepper, garlic powder, and onion powder. Cook until the chicken is lightly golden and mostly cooked through.
2. Add the diced onion, minced garlic, and carrots. Cook for 4 to 5 minutes until the vegetables begin to soften.
3. Sprinkle the flour over the mixture and stir well. Slowly pour in the chicken broth and heavy cream, stirring constantly until smooth.
4. Stir in the peas and dried thyme. Simmer for 3 to 4 minutes until the filling thickens. Remove from the heat and let it cool slightly.
5. Spoon the filling into a greased baking dish or oven-safe pie dish. Lay the puff pastry over the top, trim if needed, and cut a few small slits for steam.
6. Brush the top with beaten egg. Bake at 400°F for 20 to 25 minutes until the pastry is puffed and deeply golden.
7. Let rest for 5 to 10 minutes, then sprinkle with chopped parsley and serve warm.
Notes
Use rotisserie chicken if you want to save time, but reduce the stovetop cooking slightly so it does not dry out.
Let the filling cool for a few minutes before topping with pastry so the crust stays flaky and puffs nicely.
Bake on the center rack and place the dish on a sheet pan if you want to catch any bubbling sauce.
