Ingredients
1 pound fresh asparagus, trimmed
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 teaspoon honey
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup shaved Parmesan cheese
1/4 cup toasted pine nuts or chopped almonds
2 tablespoons chopped fresh parsley
Instructions
1. Wash the asparagus, pat it dry, and trim off the woody ends.
2. Use a vegetable peeler to shave the asparagus into thin ribbons, starting below the tips. Place the ribbons in a large bowl.
3. In a small bowl or jar, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, honey, salt, and black pepper until smooth.
4. Pour the dressing over the shaved asparagus and toss gently to coat.
5. Let the salad sit for 5 to 10 minutes so the asparagus softens slightly and absorbs the dressing.
6. Top with shaved Parmesan, toasted pine nuts or almonds, and chopped parsley.
7. Serve immediately, with extra black pepper or a squeeze of lemon if desired.
Notes
Use thick asparagus spears if possible because they are easier to shave into ribbons.
Add the Parmesan and nuts just before serving to keep the texture fresh and crisp.
For extra flavor, chill the dressed asparagus for 10 minutes before serving.
