Ingredients

3 to 4 pounds beef chuck roast

1 tablespoon olive oil

1 teaspoon kosher salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 medium yellow onion, thinly sliced

4 cloves garlic, minced

1 1/2 cups barbecue sauce

1/2 cup beef broth

2 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

6 to 8 sandwich buns

1 cup coleslaw optional for serving


Instructions

1. Pat the chuck roast dry with paper towels. Season all over with salt, black pepper, smoked paprika, garlic powder, and onion powder.

2. Heat the olive oil in a large skillet over medium-high heat. Sear the beef for 2 to 3 minutes per side until browned.

3. Place the sliced onion and minced garlic in the bottom of the slow cooker. Set the seared beef on top.

4. In a bowl, stir together the barbecue sauce, beef broth, brown sugar, Worcestershire sauce, apple cider vinegar, and Dijon mustard.

5. Pour the sauce mixture over the beef, coating the top and sides.

6. Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours, until the beef is very tender.

7. Transfer the beef to a plate and shred it with two forks, discarding any large fatty pieces.

8. Return the shredded beef to the slow cooker and toss it in the sauce.

9. Serve warm on sandwich buns or with your favorite sides.

Notes

Searing the beef first adds extra flavor, but you can skip it if you need a quicker prep.

For the juiciest texture, use chuck roast and cook until it shreds very easily.

Store leftovers with extra sauce so the beef stays moist when reheated.
