Description

Strawberry Eclair Cake is a chilled no-bake dessert made with layers of graham crackers, creamy vanilla pudding filling, fresh strawberries, and a soft strawberry frosting topping. It is easy to assemble ahead of time and perfect for potlucks, holidays, and warm-weather gatherings.


Ingredients

2 boxes 3.4 ounce instant vanilla pudding mix

3 cups cold milk

1 container 8 ounce whipped topping, thawed

1 box graham crackers

3 cups fresh strawberries, sliced

1 container 16 ounce strawberry frosting


Instructions

1. In a large bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and slightly thickened. Let it sit for 2 minutes.

2. Fold the whipped topping into the pudding mixture until fully combined and fluffy.

3. Arrange a single layer of graham crackers in the bottom of a 9×13-inch baking dish, breaking crackers as needed to fit.

4. Spread half of the pudding mixture evenly over the graham crackers.

5. Add half of the sliced strawberries over the pudding layer.

6. Add another layer of graham crackers, then spread the remaining pudding mixture on top.

7. Scatter the remaining sliced strawberries over the second pudding layer.

8. Finish with a final layer of graham crackers on top.

9. Microwave the strawberry frosting for 10 to 15 seconds, stir until spreadable, then gently spread it over the top layer.

10. Cover and refrigerate for at least 6 hours, or overnight for the best texture.

11. Slice and serve cold.

Notes

Use fresh strawberries for the best texture and to avoid excess moisture.

Let the cake chill overnight if possible so the graham crackers soften into cake-like layers.

Warm the frosting only briefly so it spreads easily without becoming too thin.
