Description
Strawberry Flaky Puff Pastry is a simple bakery-style dessert made with buttery puff pastry and a sweet strawberry filling, baked until golden and crisp for an easy treat that works beautifully for brunch, dessert, or an afternoon coffee break.
Ingredients
1 sheet puff pastry, thawed
1 cup strawberries, diced
2 tablespoons granulated sugar
1 teaspoon cornstarch
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 egg
1 tablespoon water
1 tablespoon coarse sugar, optional
2 tablespoons powdered sugar, optional
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. In a small bowl, stir together the diced strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Let the mixture sit for 5 minutes.
3. Lightly flour your work surface and unfold the puff pastry sheet. Roll gently to smooth the seams.
4. Cut the puff pastry into 6 equal rectangles.
5. Spoon a small amount of strawberry filling onto one half of each rectangle, leaving a border around the edges.
6. Fold the pastry over the filling and press the edges with a fork to seal.
7. Place the pastries on the prepared baking sheet.
8. Whisk together the egg and water, then brush the tops of the pastries with the egg wash.
9. Sprinkle with coarse sugar if using, and cut a small slit in the top of each pastry.
10. Bake for 18 to 22 minutes, until puffed and golden brown.
11. Cool slightly, then dust with powdered sugar if desired before serving.
Notes
Use cold puff pastry for the flakiest layers, and return it to the fridge if it becomes too soft while working.
Do not overfill the pastries, or the strawberry juices may leak and soften the bottoms.
For the best texture, reheat leftovers in the oven or air fryer instead of the microwave.
