Description
Vanillekipferl are delicate Austrian vanilla crescent cookies made with ground nuts and dusted in sweet vanilla sugar. Perfect for the holidays, they have a melt-in-your-mouth texture and a nostalgic flavor that pairs beautifully with tea or coffee.
Ingredients
1 cup unsalted butter, softened
2 cups all-purpose flour
1 cup ground almonds or hazelnuts
1/2 cup powdered sugar
1 teaspoon vanilla extract or seeds from 1/2 vanilla pod
1 pinch salt
1/2 cup vanilla sugar (for dusting)
Instructions
1. Cream the butter and powdered sugar together until light and fluffy. Add vanilla and salt, then mix in the ground nuts.
2. Gradually incorporate the flour until the dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30–60 minutes.
3. Preheat the oven to 350°F (175°C). Shape the dough into small crescents.
4. Place cookies on a parchment-lined baking sheet and bake for 12–15 minutes, until the edges are just golden.
5. While warm, gently coat the cookies in vanilla sugar. Cool completely on a wire rack.
Notes
Chill the dough well to prevent cookies from spreading.
Handle cookies gently—Vanillekipferl are fragile when warm.
Flavor deepens after a day, making them ideal for gifting or prepping ahead.
